Crottin Villageois Fermier is produced by Fromagerie Le Villageois in Deux-Sèvres, Nouvelle-Aquitaine. This artisanal cheese is made traditionally, from goat milking to manual aging in cellars. The farm emphasizes sustainable agriculture with on-site production of lucerne hay and corn for feed autonomy.
2. Physical characteristics
It is a small 100g cheese made from raw whole goat's milk from Alpine breed goats. The white, soft, and melting paste is covered with naturally wavy streaks forming a natural rind. Fat content is 23% of total weight.

The nose offers a hazelnut aroma, with a pronounced lactic taste that's fresh. Young, it is chalky at the core and melting; aged, it develops bolder flavors. Pairs perfectly with a dry white wine like Valençay.
