Tomme le Saulnois with hop cones is a modern artisanal creation inspired by the cheesemaking traditions of the Saulnois region in Lorraine, France. This innovative cheese incorporates hop cones during aging to impart unique flavors, blending local dairy heritage with regional brewing influences. Developed by passionate cheesemakers like Fromagerie Père Antoine, it represents a revival of regional tomme cheeses.

2. Physical characteristics

This cheese takes the classic tomme shape, about 20 cm in diameter and weighing 1-2 kg. Its paste is soft and melting, buttery, with a granular natural rind influenced by the hop cones. Aging lasts several weeks, yielding a creamy texture and appealing appearance.

3. Taste profile

The taste profile combines fine hazelnut and caramelized notes with a persistent hop background, offering a mild herbal bitterness. The buttery paste provides sweetness contrasted by subtle beer and spice aromas, perfect for complex flavor enthusiasts. It pairs excellently with Northern beers or sweet white wines from the South.

4. Production zone and period

Produced in the Saulnois area of Lorraine, mainly in Moselle department (57). Made from local cow's milk with year-round artisanal production, though best with summer pasture milk. Hop cones are sourced from nearby regional cultivations.

5. Certification

Available in organic versions from producers like Père Antoine, without specific AOC, AOP, or IGP certification. Quality stems from artisanal methods and pasteurized or raw milk variants. It enjoys local recognition for its originality.
