It belongs to the rectangular format cheeses, easy to portion and enjoy, popular in regions like Berry and the Basque Country. It embodies the authenticity of pastures and outdoor sheep farming.

2. Physical characteristics

The Brique de Brebis has a distinctive rectangular shape, with a creamy, soft, and melting paste, sometimes firmer in the center for fresher versions. Its rind is thin, natural, and flowery, occasionally slightly downy after aging. It typically weighs 150g to 2kg, aged 20 days to 4 months.

3. Taste profile

This cheese delivers a mild, fragrant, and delicately nutty taste, with creamy and lactic notes typical of sheep's milk. Fresh, it highlights its milky tenderness; aged, it develops more pronounced aromas without becoming aggressive. Its versatility makes it perfect for cheese boards, salads, or hot dishes.

Produced in France, especially in Cher (18), Berry, and the Basque Country, from sheep's milk fed outdoors on grass and forage. Optimal tasting period runs from April to August, matching the sheep's lactation cycle. Aging occurs in cellars to enhance its unique texture.

The Brique de Brebis lacks AOC, AOP, or IGP certification, remaining an artisanal cheese without protected designation. Some producers emphasize GMO-free feed and extensive farming. Awards like the 2011 Fromagora bronze medal highlight its quality.
