Fleur d'Aunis is a relatively recent cheese, created in the Charente-Maritime region of France by the Fromagerie de Saint-Antoine-de-Breuilh, experts in soft washed-rind cheeses since 1960. Its name honors the ancient province of Aunis, likely derived from the abundant alder trees in the area during the Middle Ages. Though the exact creation date is unspecified, it represents innovative cheesemaking rooted in regional tradition.

2. Physical characteristics

This is a soft cheese with a washed rind, made from cow's milk, sometimes unpasteurized. The rind, amber-colored and dusted with flour, gives it a distinctive pale, floury appearance. The paste is supple and creamy, typical of cheeses refined through turning and rubbing.
