Persillé de Chèvre is one of the rare French 'blue' cheeses made exclusively from goat's milk. Produced at La Ferme de la Tremblaye in the Yvelines department, it follows a 50-year fermier cheesemaking tradition. Its precise history is sparsely documented, but it blends blue cheese techniques with goat milk specialties.[4][7]

2. Physical characteristics

This cheese has the shape of a small tomme: a flat, supple cylinder about 9-11 cm in diameter, weighing 700g to 1kg. Its rind is ashed, slightly moist, darkening with aging. The paste is supple, creamy, and moist, white with rich blue veining.[4][7]
