Compostelle is a unique goat's milk cheese created by Fromagerie de Loubressac in the Lot department. Its name and scallop shell shape are inspired by the Camino de Santiago de Compostela, with the Lot region being a passage for pilgrims through the Causses du Quercy and Rocamadour. It perpetuates local cheesemaking traditions tied to this historic route.

2. Physical characteristics

This cheese, made from raw goat's milk (pasteurized), weighs about 120g and features a distinctive scallop shell shape. It has a white color and a smooth, light texture in the mouth. After 7 days of aging, it gradually becomes drier.

3. Taste profile

Compostelle offers a very fresh goat flavor, zesty and slightly nutty. Its creamy and smooth texture makes it melting, perfect with honey, fresh figs, or dried fruits. Over time, its goaty notes intensify for a more pronounced taste.

4. Production zone and period

Produced in Loubressac in the Lot department (46), the milk comes from 46 local producers and neighboring areas. It is made using the lactic curd method with slow coagulation over 24 hours. It ages for 7 days in the dairy's cellars, with no specific seasonal production period.

5. Certification

Compostelle has no AOP, AOC, or IGP certification. It is an artisanal creation from Fromagerie de Loubressac, highlighting the Quercy terroir without official labeling. Its quality stems from traditional methods and local expertise.
