Elgines is a farm cheese created in 1989 by Elisabeth and Pierre Maury in Cantal, Auvergne. This raw goat's milk cheese reflects local artisanal know-how in a region traditionally focused on cow's milk cheeses like Cantal or Salers. Its production highlights breeders' adaptation to goats in a volcanic pasture-rich terroir.

2. Physical characteristics

Elgines has a creamy paste, sometimes firmer depending on aging, with a smooth texture typical of fresh to medium-aged goat cheeses. Its natural rind is thin and slightly wrinkled, developing a beautiful ivory patina. The wheels are small-sized, ideal for authentic farm production.

3. Taste profile

This cheese offers intense caprine aromas with hazelnut and fresh grass notes, typical of Auvergne pastures. On the palate, it is creamy, balanced between mild acidity and a slightly tangy finish. Its flavor evolves with aging, gaining complexity and strength.

4. Production zone and period

Produced exclusively in Cantal department (15), heart of Auvergne, where volcanic meadows feed the goats. Farm-made and seasonal, mainly spring and summer when milk is richest. The area benefits from a climate suited to goat farming.

5. Certification

Elgines has no AOP, AOC, or IGP certification, remaining an artisanal farm product without official label. Its quality relies on the Maury family's traditional methods. It embodies the authenticity of unprotected local cheeses.
