1. History
The Bichonnet originated in the 1980s when Annick and Pierre, fresh from agricultural school, settled north of Tarbes in Bigorre. Encouraged by a friend who was an affineur, they began producing this farmstead goat cheese using organic methods. It fits into the cheesemaking tradition of the Hautes-Pyrénées, reminiscent of local mixed-milk practices like Chèvreton.
2. Physical characteristics
Bichonnet is a small cylindrical cheese typical of farmstead goat varieties. It features a thin, ashed rind enclosing a soft, creamy paste. Produced organically on a small scale, it weighs around 100-200 grams with a smooth, shiny interior.
3. Taste profile
This goat cheese delivers intense caprine flavors with bright acidity and hints of nuts and dried herbs. It offers a creamy, slightly salty mouthfeel due to the ash, melting smoothly on the palate. Enthusiasts enjoy its balance of freshness and boldness, perfect plain or as a meal closer.
4. Production zone and period
