Description

1. History

The Pavin was created in 1988 by passionate Auvergne cheesemaker Marcel Guillaume to meet Parisian creamers' demand for a typical yet original small Auvergne cheese. It is named after Lake Pavin, a natural gem nestled in the crater of a 5,000-year-old extinct volcano near Besse-en-Chandesse in Puy-de-Dôme. Produced by Fromagerie Guillaume, founded in 1924, it upholds artisanal know-how and recently won a silver medal at the 2025 International Lyon Competition.

2. Physical characteristics

Pavin takes the form of a flat disc weighing about 500 grams, with a thin, smooth, orange rind from iron oxide used in weekly washings. Its paste is supple, creamy, and pale yellow, sometimes slightly sticky to the touch. Aged for 28 days in humid natural caves carved from volcanic ash flows, it develops a light white down on the rind.

3. Taste profile

This mellow cheese delivers a soft, creamy flavor with pronounced hazelnut notes lightly salted. Its aroma recalls undergrowth, mushrooms, or a mild cave scent, typical of its aging process. Its approachable mildness appeals to both children and adults, perfect plain or in dishes like truffade or raclette.

4. Production zone and period

Made in Cantal from local cow's milk, Pavin is aged in Puy-de-Dôme, at the heart of Auvergne's volcanoes, especially near Besse-en-Chandesse and Monts du Forez. Production is rooted in the Auvergne-Rhône-Alpes region, using natural volcanic caves for optimal aging. While exact periods are unspecified, it follows Auvergne's traditional summer milk cycles.

5. Certification

Pavin holds no AOC, AOP, or IGP labels, remaining a recent artisanal creation from Fromagerie Guillaume. Its quality is acknowledged by awards like the silver medal at the 2025 International Lyon Competition. It belongs to the Saint-Nectaire family but lacks its protected designations.
