Developed by passionate cheesemakers like Fromagerie Père Antoine, it represents a revival of regional tomme cheeses.
2. Physical characteristics
This cheese takes the classic tomme shape, about 20 cm in diameter and weighing 1-2 kg. Its paste is soft and melting, buttery, with a granular natural rind influenced by the hop cones. Aging lasts several weeks, yielding a creamy texture and appealing appearance.

The taste profile combines fine hazelnut and caramelized notes with a persistent hop background, offering a mild herbal bitterness.
