Description

1. History

The Camembert de Normandie has legendary origins in 1791, when farmer Marie Harel reportedly learned the secrets from a refractory priest from Brie, whom she hid during the French Revolution inCamembert, Orne.

Her descendants, including daughter Marie and son-in-law Thomas Paynel, expanded production and marketing in the 19th century, boosted by the Paris-Lisieux-Caen railway in 1855.

In 1890, Eugène Ridel's wooden box enabled transport, and during WWI, it became a patriotic symbol supplied to the French army.

2. Physical characteristics

Camembert de Normandie is a soft paste cheese with a white bloomy rind, ladle-molded, packaged in 250g poplar wood boxes.

It measures about 11 cm in diameter and at least 250 g, with a thin, downy rind fromPenicillium candidum, selected since 1910 for its iconic white color.

At maturity, it collapses under its own weight, revealing a creamy, runny interior.

3. Taste profile

It delivers a rich, creamy taste with mushroom, hazelnut, and cut hay aromas, typical of aged Norman cheeses.

The bloomy rind adds slight bitterness contrasting the intense milky smoothness of the paste, intensifying with age.

Flavors evolve to more animal and complex notes after 4-6 weeks of aging.

4. Production zone and period

Produced exclusively in Normandy, in the AOP zone covering Calvados (14), Orne (61), Manche (50), and Eure (27) departments.

It uses raw milk from Norman cows collected in this area, following traditional farm or dairy methods.

Production runs year-round, but optimal tasting occurs in winter when at peak maturity.

5. Certification

Camembert de Normandie has hadAOP status since 1983, ensuring traditional production in a delimited zone with raw Norman cow's milk.

The Syndicat des Fabricants de Véritable Camembert de Normandie, founded in 1909, worked for this recognition post-WWI.

This certification sets it apart from imitations produced elsewhere.
