Anneau du Vic-Bilh is a recently created cheese originating from the Vic-Bilh region in the Pyrénées-Atlantiques. This farmhouse cheese represents an artisanal innovation in the cheesemaking tradition of southwestern France. Its distinctive ring shape gives it a highly artisanal and recognizable appearance.
2. Physical characteristics
Anneau du Vic-Bilh is presented in the form of a circular ring with a 10-centimeter diameter and a central hole of 2.5 to 3 centimeters. Its weight ranges from 190 to 300 grams with a thickness of 1.5 to 2 centimeters. Its crust is slightly bluish, wrinkled and dusted with wood ash, while its paste is pure white, firm and creamy under the crust.
3. Taste profile
This cheese offers an excellent balance between salty and slightly acidic notes with a very fine texture that melts in the mouth. Its goat flavor is discreet and fresh, revealing delicate aromas characteristic of goat's milk. The soft and creamy paste makes it particularly appreciated by goat cheese lovers.
4. Production zone and period
Anneau du Vic-Bilh is produced in the eastern part of the Pyrénées-Atlantiques department, in the Vic-Bilh region, a renowned wine country of Béarn. Manufacturing is seasonal, extending from December to August. The minimum aging period is 10 days, which can extend up to three weeks to fully develop the flavors.
5. Certification
This cheese benefits from the AB (Organic Farming) label and is produced exclusively in organic farming, controlled by certification bodies such as ECOCERT. It is made from raw or pasteurized goat's milk, with a fat content of 23% in whole milk.
