1. History
Bûchette is a traditional French goat cheese with a long heritage. Originating from several regions, particularly Poitou-Charentes and Auvergne, it represents an ancient cheesemaking tradition linked to goat herding. The bûchette is part of the continuity of French goat cheeses, whose origins date back thousands of years, with progressive democratization from the Middle Ages onward.
2. Physical characteristics
Bûchette is presented in the form of a small cylindrical log weighing between 100 and 150 grams. It measures approximately 14 cm in length with a 2.5 cm diameter. Its thin rind can be cream-colored and partially ash-covered, slightly wrinkled and covered with fine white down. Its paste is smooth, white, dense and delicately creamy under the rind.
3. Taste profile
Bûchette offers a very fresh taste with a sweet and milky note characteristic of goat cheese. Its texture is light, airy and melting in the mouth, releasing lactic aromas with pleasant freshness. Depending on the variants (fresh, creamy, aged or ash-covered), it generously delivers all the flavors of its terroir, from irresistible creaminess to more pronounced notes.
4. Production zone and period
Bûchette is produced in several French regions, notably in Poitou-Charentes (Deux-Sèvres), Auvergne (Allier), Provence and Tarn. It is made from raw or thermized goat milk depending on the producer. Production occurs year-round, although quality is optimal during periods of better animal nutrition.
5. Certification
Bûchette is not protected by a specific Controlled Designation of Origin (AOC) or Protected Designation of Origin (AOP). However, some producers offer farmhouse versions made with raw milk or certified organic versions. It remains a traditional French goat cheese without official appellation certification.
