1. History
The Crémeux du Jura is a relatively recent addition to French cheesemaking traditions, created at the Fromagerie des Gentianes in Pontarlier, Doubs, over 800 meters altitude. This dairy specializes in soft paste cheeses. It draws inspiration from ancient Jura cheesemaking traditions dating back to the 13th century and resembles Mont d'Or in shape and packaging.
2. Physical characteristics
Crémeux du Jura is a soft paste cheese with washed rind, presented in a cylindrical wooden poplar box, banded with spruce aubier. Its rind is pleated, white to brown, reflecting the folds of Haut-Doubs. The paste is supple and creamy, with 22% fat content for an average 250g weight.
3. Taste profile
It delivers a bold, fruity taste with undergrowth and rustic floral notes from the Jura Massif. The aroma recalls resinous woods from the spruce. Its creamy texture makes it perfect raw on a cheeseboard, as an aperitif, or warm with potatoes and charcuterie.
4. Production zone and period
Produced in Franche-Comté, mainly in the Doubs department (25), at Pontarlier by Fromagerie des Gentianes or Badoz. It uses pasteurized cow's milk from local pastures. Unlike seasonal Mont d'Or, it is made year-round.
5. Certification
Crémeux du Jura has no Protected Designation of Origin (PDO/AOP), AOC, or PGI. It follows artisanal methods in Jura dairies emphasizing hygiene and quality. Its regional origin is upheld by reputation without official labeling.
