Crémeux d'Ossau is an artisanal cheese inspired by Béarn's cheesemaking traditions, produced in the high Pyrenees. Its production ties to the summer highland pastures where cows graze on rich herbs for exceptional milk. Though not protected like nearby Ossau-Iraty, it upholds the region's ancestral pastoral expertise.

2. Physical characteristics

This cheese features a creamy, soft paste with a bloomy rind typical of mold-ripened varieties. Its melting texture shows a pale ivory, homogeneous appearance. Made in wheels or portions, it measures 10-15 cm in diameter and weighs 200-500g.

3. Taste profile

Crémeux d'Ossau delivers mild fresh cream and hazelnut aromas with subtle lactic acidity. Its rich, lingering flavor carries floral notes from Pyrenean pastures. It melts smoothly in the mouth, perfect plain or in sweet-salty pairings.

4. Production zone and period

Exclusively made in Béarn, central Pyrenees over 1000m altitude by Fromagerie Eugène. Production runs from June to September, aligning with summer transhumance. This period ensures optimal cow's milk from mountain herbs.

5. Certification

Crémeux d'Ossau lacks AOP, AOC, or IGP status, remaining a local artisanal product without official labels. Its quality stems from traditional methods and Béarn terroir. This grants it authenticity prized by farm cheese enthusiasts.
