1. History

Ash-coated Crottin is a French goat cheese with ancient roots, particularly associated with central French regions such as Sancerrois and Berry. Its name derives from the Berrichon term « crot » meaning « hole », formerly designating places along riverbanks where women washed laundry. The clay soil bordering these « crots » was used to make cheese molds for draining curds, with the container eventually giving its name to the cheese itself.

2. Physical characteristics

Ash-coated Crottin is distinguished by its white paste covered with a black or gray-black ash crust. Its texture is both firm and tender, with a creamy consistency. The cheese features a fine layer of vegetable ash that gives it its characteristic appearance and contributes to its maturation. Its format is compact and small-sized, typical of traditional crottins.

3. Taste profile

Ash-coated Crottin offers a fresh and mild goat cheese flavor, with subtle notes provided by the vegetable ash. Depending on the aging level, the flavor can intensify and develop delicate earthy or smoky nuances. The nose reveals characteristic hazelnut aromas. This cheese is enjoyed as an appetizer in slices, on bread, or to accompany a salad.

4. Production zone and period

Ash-coated Crottin is produced in central French regions, notably in Berry, Sancerrois, and Deux-Sèvres. Production follows a slow artisanal method: raw goat milk is collected daily after milking and transformed the same day to ensure freshness. The cheeses are molded and then aged in caves for approximately two weeks, where they are monitored by expert cheesemakers and turned by hand.

5. Certification

Ash-coated Crottin is not currently protected by a specific AOC, AOP, or IGP certification. However, producers such as Fromagerie Johnny Blanc and Rians perpetuate ancestral cheesemaking traditions by using raw goat milk from local producers located within 30 km of the dairy, thereby guaranteeing product quality and authenticity.
