Description

1. History

Flocon de Savoie is a modern cheese originating from the Savoie region, produced by the Chabert dairy. While Savoie has a long cheesemaking tradition dating back to the Middle Ages, Flocon de Savoie represents a more contemporary creation within the family of Savoyard cheeses. This small white round cheese continues the region's dairy traditions, where raw milk and artisanal methods are privileged.

2. Physical characteristics

Flocon de Savoie is a small round cheese weighing 120 grams, entirely white with a compact and elegant shape. Its very fine bloomy rind is slightly downy, resembling the delicate appearance of a snowflake, from which its evocative name derives. The heart of the cheese is soft and melting, revealing the creamy texture characteristic of soft-paste cheeses. Its fat content is 24 grams per 100 grams of finished product.

3. Taste profile

Flocon de Savoie offers a delicate and subtle flavor with slightly lactic notes that characterize Savoyard soft-paste cheeses. Its aromatic profile includes delicate hazelnut touches, typical of cave-aged cheeses. The flavor remains fine and elegant, ideal for tasting with a knife point or on good bread. The melting heart of the cheese progressively releases its flavors during tasting.

4. Production zone and period

Flocon de Savoie is produced in Savoie, specifically in Sales (postal code 74150), in the Auvergne-Rhône-Alpes region. Production uses pasteurized Savoyard cow's milk, rich and creamy, sourced from Savoyard alpine pastures. Aging takes place in caves, where the cheese is turned by hand every 2 days to fully develop its flavor and create the delicate pattern on its rind. The Savoie region benefits from ideal climatic and geographical conditions for dairy farming.

5. Certification

Flocon de Savoie does not hold official AOC, AOP, or IGP certification. However, it is produced according to Savoyard dairy production traditions, using artisanal methods and cave aging. An organic version of Flocon de Savoie is available, certified organic, guaranteeing compliance with organic production standards. The cheese continues Savoyard cheesemaking practices recognized for their quality.
