Description

1. History

The Gaperon gets its name from "gape" or "gaspe", an Auvergnat dialect term for buttermilk, used by thrifty Auvergnat peasants to make this cheese from butter production leftovers.[1][5]

Historically, the number of Gaperons hanging near the fireplace indicated the farmer's wealth and his daughter's dowry, with its dome shape from drying in a cloth.[2][3]

Originating from the Limagne plain between Clermont-Ferrand and Vichy, its shape is legendarily inspired by the Puy de Dôme.[2][4]

2. Physical characteristics

Gaperon is a small cheese of 250-500 g, dome-shaped with 5-11 cm diameter and 5-10 cm height, featuring a soft, crumbly paste and white bloomy rind, sometimes slightly yellowed.[5][8]

Molded in cloth or by hand, it is aged 3-4 weeks, developing a natural bloomy crust.[1][7]

With about 23% total fat and 52.8% on dry extract, it uses whole or partially skimmed milk.[2]
