Description

1. History

Jolirond is an artisanal cheese created at Ferme du Vinage in Roncq village, Hauts-de-France, in the Lys valley. Inspired by Carré du Vinage, it stands out with annatto added during curdling, giving its distinctive orange color. It gained recognition for its farm production and originality, earning the “Saveurs d’Or” certification.

2. Physical characteristics

Jolirond is a soft paste cheese with a downy bloomy rind, made from raw cow's milk from Prim’Holstein cows. Its vibrant orange hue comes from natural annatto dye added during coagulation. It has a creamy texture and weighs about 190 g per half-piece, with 27% fat content.

3. Taste profile

The nose reveals mushroom and undergrowth aromas. On the palate, it delivers a slightly sweet hazelnut flavor with a creamy melt-in-the-mouth texture. Annatto enhances its unique taste among bloomy rind cheeses.

4. Production zone and period

Produced exclusively at Ferme du Vinage in northern France, Hauts-de-France region, Nord department (59). It is farm-made artisanally without specified seasonal limits, suited for continuous production. The Lys valley imparts its authentic terroir.

5. Certification
