Description
1. History
Lorenthym is a farm-made goat cheese created by the Laurent family in Haute-Garonne. Its name combines "Laurent" and "thym" (thyme), highlighting its signature aroma. This artisanal product upholds the tradition of raw milk local cheeses.
2. Physical characteristics
This small cheese weighs about 150g with a vermiculated, flowery or natural rind that is slightly oozing. The paste is white, soft, and delicate. Aged for 2 weeks, it is flavored with thyme essential oil added to the curd.
3. Taste profile
Lorenthym balances the mildness of fresh goat cheese with subtle thyme notes perfectly. Neither overpowering nor faint, its aroma evokes Provençal flavors despite its Occitan origin. The melting paste releases herbaceous and slightly tangy notes.
4. Production zone and period
Primarily produced in Haute-Garonne (31), with mentions in Tarn (81) and Lot (46). As a farm goat cheese, production follows the caprine milk cycle, typically spring and summer. Available year-round due to short aging.
5. Certification
Lorenthym is a farm raw goat's milk cheese without AOP, AOC, or IGP certification. Its artisanal production highlights local quality sans official label. It represents the excellence of unprotected regional cheeses.
